Our designers come up with their own copy as a suggestion. We try to avoid using lorem ipsum. Our marketing team + copywriters go over the screens in Figma and use the comment tool to suggest changes. We occasionally use a Google doc for marketing driven projects, such as a landing page or email campaign.
Copy changes in the existing product are usually handled via Jira tickets. Happens less than it should, honestly.
Not the most documented process, but it works for now. Our team is fairly small. I've also worked at a larger agency that managed all copy (with multiple languages) via spreadsheets. It was a pain in the ass.

It's hopefully changed since I graduated in 2012, but the only graphic design programs available at my school were through the Arts department — focusing entirely on creating "art", rather than real world digital design. You had to take drawing and painting courses to even qualify for the graphic design program. My professors barely knew Illustrator.
The only web design class available was through the Computer Science department and focused more on HTML and Dreamweaver rather than actual design or user experience.
I learned everything on my own through side projects and graduated with an extreme distaste for universities. I'm still paying off student loans :(
I'm just impressed this wasn't designed in a weekend by a new CEO and a couple of interns
