Might have to do with OLED displays becoming more popular. In this article Google Explains that black UIs on OLED-displays are using less energy.

Here's a list I made for myself a few months ago. Some courses are free, some are not – and they all probably have a different focus. Can't comment on them, haven't tried them. Also; there are a few Master degrees in HCI or UX from several universities available online. You might want to look into those as well.
