Have you tried involving them earlier on in the design process? Personally, I find it easier to get buy-in when you create a sense of shared ownership from the beginning. And If lack of time is a key constraint, they might even guide you towards a more feasible solution.

Symbols with overwrites get reset to default state.. (seems like text layers are an exception though)

Have you tried Figma? Their import of Sketch files might solve some of your collaboration issues. I've been using Mac during my entire professional career, but if I was to switch to Windows I'd probably miss prototyping tools more than Sketch itself.
