To answer your question shortly yes, if a user updates a type style it will update everywhere.
The way I'm envisioning the app to work is below would be:
Set up your type system similar to this medium post: https://medium.com/sketch-app-sources/text-system-mastery-with-shared-styles-9931bea7d085
If you wanted to update that style you would just update the style in Sketch and it will get updated everywhere.

Hey William,
I was thinking you would set up styles like normal let's say on your small break point. Then you would select your text box and assign the styles for your break points.
Your idea might be cleaner and less work so if it we do build this thing we'll check out that route as well. Great idea.
